Happy end of the year!
This was a photo I took on Christmas Day, during a hike with a friend.
Christmas Day was also the morning that I decided that in order to fully appreciate the upcoming new year, I needed to, “pause and purge.”
I turned off my computer, closed my to-do list, put away home improvement projects for another day.
I did this to my email inbox:

If you don’t know what that is, it means I deleted every. single. email in my inbox.
All 3,791 emails.
POOF!
PURGED!
Yes, I get a lot of emails every day. But I wanted to start 2021 with a clean slate. I figure, if it’s important, I’m sure it will find its way back to me somehow (maybe I’m a bit optimistic…)
It’s important to clean and clear old space to make room for new energy. Positive energy. Good flow.
Trying to stuff more things into an already-full box just creates pressure.
Clear the box, so that good luck, good health and prosperity energy can enter and settle in.
I’m doing the same for my refrigerator, freezer and pantry.
The space is clean, organized and that makes me so happy! I gained a beautiful sense of peace with the food that I have in my home. The cleaning process also made me realize that I have over $1,000 worth of food already in my kitchen (I even discovered 3 lobster tails and had NO IDEA there were 5 ribeye steaks in the freezer!)
I’m inviting you to do the same. Perhaps in early January, we can all get together (virtually, of course), and do a New Year’s Challenge to create a neat, organized space in your kitchen? Let me know if you’re interested, we could create a free “challenge” and community group on Facebook.

Happy New Year friends! We love celebrating and rolling in the new year with black-eyed peas. The southern tradition is that black eyed peas bring you, prosperity, good luck, and fortune in the New Year. Maybe we are a little superstitious, but we love this tradition and they taste incredibly delicious! These black-eyed peas have deep, fabulous flavor from the sautéed mirepoix known as, onions, carrots, and celery, a little bit of sweetness from tomatoes, salty ham, and some freshness from the kale! A pot full of very lucky nourishment you could say.
These are also ingredients that you might have leftover from you holiday dinner!
Dried black eyed peas: The main component of course! These legumes vary in size and the color of eye may very as well. Thought to bring prosperity and good luck in the New Year!
Mirepoix: Despite how fancy this French word may sound, it is simply just onions, celery and carrots cooked in butter or oil to coax the flavors out without caramelizing them. Found in many savory dishes and adds so much to this special dish!
Veggies: We you fresh tomatoes here for a bit of sweetness and kale for lots of fresh greens. You could use collard greens in place of kale too, as that is very common to eat with both ham and black eyed peas!
Ham Bone, Smoked Ham Hocks, Diced Ham: You might have these leftover from your holiday dinner! These lend fabulous salty flavor to the black eyed peas and make for an incredibly delicious combination. If you don’t have a ham bone, any pork bones will work great here!
If you wish to use collard greens or turnip greens, add them the same time as the diced ham and tomatoes as these need a bit longer to cook.
1. Reserve carrot peels and tips, celery ends, and onions ends to add to your stock bag in the freezer. You can also add these to your ongoing stock, like we do! Here is a recipe for our ongoing stock.
2. Don’t throw away your ham hocks and ham bone! You can keep them to make ham stock in a pressure cooker or you can give them to your dogs and they will definitely be thanking you later.
3. When removing you kale leaves from the steams, just rip the leaves off and add the steams to your stock bag as well. These thin leaves pack a punch of nutrients and add a lot to your homemade stocks.
4. Make black eyed peas to have ready at all time! Do a longer soak and rinse them off really well. Freeze them in 1-2 cup portions in freezer friendly bags of containers. Be sure to label the amount and date!

I don’t know about you, but with all of the baking and cooking I do, I have a ton of spices laying around. From cinnamon sticks to cardamom pods, my cabinets are full of bags of extra spices that are taking up space and in the way. But here at Steamy Kitchen, we never throw things away! Instead, we find creative and fun ways to use up extra food, like these ideas for how to use up extra spices laying around!

If there is one thing we really don’t like, it’s food waste. Repurposing these leftovers in creative ways ensures that nothing will get wasted, which makes us totally happy! So much food is wasted in the United States, but we are here to make sure that never happens again by bringing your leftovers back to life!
Infusing extra spices into olive oil is a quick way to take a few simple ingredients and elevate them into a delicious, gourmet treat. I love mixing extra spices into olive oil and keeping it around to use in creative cooking ventures, but infused olive oil makes a great present, too!
Here are some of my favorite flavor combinations for infusing extra spices into olive oil:
In the same vein as infused olive oil, compound butter is a gourmet take on an every day ingredient that elevates your cooking and makes a great present to hand out to friends and family. It’s almost too easy, and putting it out at the party spread is a sure way to wow the crowd!
Compound butter is much more accessible for sweeter spices as well as savory, so flex your creativity and use up those extra spices in compound butter! Here are some of my favorite ways to use extra spices in compound butter:
Adding extra spices to smoothies is a great way to use up extra spices AND add a boost of a flavor and health benefits to your morning smoothie! Did you know that spices like cinnamon, turmeric, and ginger have health benefits ranging from antioxidants to digestion aids? Grating just a little bit of these extra spices into your smoothies can help you use up leftovers and eat healthier!
Here are some of my favorite smoothies using extra spices:
One of my favorite ways to use up extra spices isn’t an edible idea at all! I love using extra spices to make little potpourri sachets to use to freshen up areas around the house. They also make a great present to give to friends and family! I either tuck these spice packets into drawers to freshen things up or lightly simmer each packet in a big pot of water to clear out bad kitchen smells.

Sometimes, all I need to reimagine leftovers is a little help for myself! Making spice mixes is so easy, and the combinations you can create are endless. All it takes to create your very own custom spice mixes is a little imagination and a spice grinder if your spices are whole. Otherwise, just find a bowl and get mixing!

Just like with leftover berries, extra spices can be a delicious addition to any home-brewed kombucha that you have going. Add spices into the second fermentation to add a little bit of zing!

Berries go bad so quickly, and I hate throwing them away, especially when they’re so good for you and add so much flavor to any dish from breakfast to a quick snack. Instead of throwing them away, here are some of my favorite ways to use up extra berries.

Before berries go bad, make them into jam! I think a lot of people are intimidated by the idea of making jam because they think that they need to learn how to use gelatin or pectin to make the jam set. While that is the case for making jams out of leftover fruits like peaches and apples, it’s much easier to make a quick, no gelatin jam with berries because of the high amount of pectin that is naturally found in berries! Pectin helps the jam set quickly and easily, which means that almost any jam you make using berries will turn out perfectly.
Here are some of my favorite jam and jelly recipes, plus a few extra ways to use up the jam you make!
If you follow me on Instagram, you know that I’ve gotten really into brewing my own kombucha lately! It’s so easy, fun, and fast to whip up a batch of this probiotic-full fermented tea. Plain kombucha is delicious, but adding berries is a GREAT way to add interesting flavor and help it get even fizzier. Plus, even if your extra berries are getting a little bit elderly, they’ll still work great.
Here are some of the recipes I’ve been loving in my home brews!
If your extra berries are about to go bad, use your freezer to help you extend their lifespan! I usually have a few cartons of berries going at a time, and sometimes they start to go bad before I’m able to use them all. When this happens, I have a great method for freezing berries.
To freeze my extra berries, I portion a few servings out, put them in small leftover containers, and then carefully label them before freezing them. I pull these frozen packets of berries out when I’m making pie, in need of a way to spice up my oatmeal, or, my favorite, when I’m making a fruity smoothie!
I love using frozen extra berries to make my smoothies because I’ve already done most of the work for myself! I just pop one of the packages of frozen berries into my blender with some almond milk, a few extra flavorings, and some protein powder and give it a whiz!
Here are some of my favorite smoothie recipes:
It’s so important to drink water, but sometimes, I get SO BORED with drinking just plain water all day long! When I have extra berries or any sort of fruit on hand, I love using it to make infused water! Infused water is a really good way to add flavor and healthy benefits to the water you’re drinking all day. Plus, using extra berries you have on hand adds a zing of flavor and antioxidants!
Here are some of my favorite inspirations for infusing water:
I love making overnight oats! They’re such a healthy, nutritious, and filling breakfast, and it’s hard to get any easier than just soaking oats overnight! When I have extra berries on hand, I throw them into my overnight oats to add flavor and some fun texture. It makes a healthy breakfast that’s ready as soon as I finish my morning coffee!
Here are some recipes for overnight oats that you can add leftover and extra berries to so you reduce food waste:
When the extra berries sitting in my fridge are getting a little too old to eat, I love making a big batch of berry simple syrup. Simple syrup is just a sugar and water syrup that can be used in cocktails, mocktails, or even on pancakes or waffles! It’s a great way to use up extra berries that are just about to go bad, and you can even throw in extra spices, citrus, or whatever else you have laying around to add some extra flavor!

Is your milk on the edge of turning bad? Then you need this post in your life! Buying extra milk at the store is super easy to do. Perhaps you went on vacation and came back to sour milk. Maybe you just forgot you had a container hiding in the back of your fridge. Whatever the cause may be, you may feel the need to pour it down the drain, but I urge you to please not do that!
Sour milk has been used in recipes for a very long time. While you probably shouldn’t just down a gallon of sour milk, it is a fabulous ingredient to use in so many different things. From cakes and pancakes, to bread and cheese making, even marinating meats! The acid in sour milk, similar to buttermilk, helps tenderize sweet and savory foods alike without giving it a strong sour flavor. So, there is no crying over spoiled milk, because you can still totally use it!

I know we say it a lot, but breakfast is the best. Both sweet and savory is acceptable and all of the best foods are included! One of our favorite is buttermilk pancakes. Fluffy, tall, tender, and incredibly delicious. A tall stack of pancakes makes mornings that much better and so much tastier!

Want to know what keeps a cake insanely tender even after days of baking it? No, it’s not just how you store it, but it’s really about what you put in it. Buttermilk or sour milk help cakes stay tender and moist days after baking. They will help yield a tight crumb, while still being incredibly moist.
You can use sour milk in place of buttermilk in any cake or loaf recipes for an incredibly sweet and tender dessert. Even without a glaze or icing, you’d be perfectly satisfied! Oh the magic of sour milk! Check out some of our favorite cake recipes below:
Irish soda bread is a quick bread recipe with very minimal ingredients. It is one of those special recipes that need a buttermilk or sour milk to make it correctly. Soda bread relies on baking soda for it’s rise, so in order to activate that you need the acid you get from buttermilk or sour milk. So, no only does it lend a fabulous flavor, but it truly is science!
We love adding raisins and currants to our soda bread, but there are so many different variations of it. This traditionally not sweet bread is extra delicious with salted butter, so I suggest you keep some on hand for this very reason! Check out some of our favorite Irish Soda Bread recipes below:
#4: Make Cheese, Yogurt, and Sour Cream with Sour Milk
When making other dairy products with soured milk you have to be extremely careful. What you buy in the store is pasteurized milk. To make other dairy products, it is best to use raw milk, that hasn’t been pasteurized. When milk is pasteurized, it kills the beneficial Lactic Acid bacteria, so best not to use that type of milk for other dairy products.
When you use raw milk and it goes sour, it creates something called Clabber. This is a product of basically fermenting (letting your milk sour). This type of soured milk is excellent for the making of cheeses, yogurt, and sour cream. If using pasteurized milk from the grocery store, stick to one of the baked goods! Buttermilk, also known as sour milk, helps tenderize the meat to ensure it’s extra juicy and moist inside, while maintaining a beautiful golden skin. You can use a buttermilk marinade for grilling, baking, and frying! Of course if a recipe calls for buttermilk, just use sour milk in its place!
