5 of the Best BBQ Recipes to Make in Your Smoker

Smoked meats are basically the epitome of summer cooking! They bring people together and the end result is always so tasty.

Whether you’ve got an electric smoker, pellet grill, charcoal smoker, or some other popular variation, making and eating smoked meats is truly an experience. There’s just nothing like that smoky flavor. And you can smoke all types of meat to create everything from spare ribs to lamb shoulder to chicken thighs to pork chops and so much more.

Where Did Smoked Meats Originate?

Imagine it’s a warm summer day, and the savory smell of smoked meats hits your nose. It’s so distinct, and nothing compares to it. You almost feel a kinship with everyone who’s shared in this experience and it makes you wonder… where did this delicious tradition begin? Let’s talk about the origins of smoked meats and how they became a summertime favorite.

It might come as a surprise, but did you know that smoked meats have been around for centuries? Yup! It all started with early humans in the Paleolithic era. Cavemen discovered that hanging meat *near* a fire gave it a different flavor and preserved it. It went on to be used as a preservation method before fridges became a thing.

The smoking process is all about slow-cooking meat over a low fire and letting the smoke infuse the meat with a rich, smoky flavor. And different cultures throughout the world each have their own twists on smoking meats. While Native Americans preserved fish and game with smoking, Europeans developed different methods for smoking pork, beef, and other meats. After many years of refinement, modern day pitmasters now spend their days perfecting the smoking technique down to a science.

What makes smoking and summer go together so well? Well, on a base level, it’s a social activity and a distinct experience. Friends and family gather around, converse, and connect while the slow-cooking process happens, which gives everyone time to relax and bond. And since smoking happens outside (because you don’t want everything in your home to smell like a bonfire), it makes for a great outdoor activity, which also makes smoking easily synonymous with lazy summer days. (And let’s face it, the smell will literally attract curious neighbors to your door like a moth to a flame.)

For many, there’s also an element of tradition. Because smoking meats has been around for so long, many families have their own smoking techniques that have been passed down from generation to generation. It’s a lot more than just a cooking experience for some.

It just takes 3 steps: 1) Add your favorite rub and smoke for three hours. 2) Cover the ribs with foil while soaking them in Carolina sauce or apple juice for two more hours. 3) Remove the foil, and baste with BBQ sauce (if you want), then smoke for one more hour. What’s the best cut of meat to smoke for beginners?

If you’re a smoking newbie, chicken wings are a great choice. Once you get the hang of that, advance to pork shoulder (or what’s also known as Boston butt), which is forgiving, has a good amount of fat, and is sure to be tender and delicious.

How do I choose the right smoker?

The best smoker for you really depends on your preference and experience. A pellet smoker is good for the convenience factor and great temperature control, while charcoal smokers can give you more of traditional flavor. If you want both qualities, then a vertical smoker might be a good choice for you.

What are the best smoker recipes for pork?

Try pulled pork, pork ribs, or pork tenderloin. These cuts not only absorb smoke really well, but they’re also BIG crowd-pleasers. Also, you can really experiment with pork belly if you’re looking for a rich, decadent cut of meat.

How do I prepare meat for smoking?

First, bring your meat to room temperature. If you’re looking for a bolder flavor, you may choose to use a dry brine or marinate your meat with worcestershire sauce and apple cider vinegar. Other flavor enhancers include cream cheese stuffing in smoked chicken breast or spicy maple bourbon glaze on baby back ribs. The world is your (smoked) oyster!

How long does smoked meat take to cook?

The cooking time will vary with each cut of meat and smoker type. For example, pork shoulder will need about 1.5 to 2 hours per pound, while a whole brisket might take 12-18 hours. However long your cook time, be sure to use a meat thermometer to ensure it’s cooked properly.

How do you smoke poultry like chicken or turkey?

Whether you’re smoking a whole chicken, chicken legs, or smoked turkey breast, we recommend brining cuz it really helps retain poultry’s moisture. Then smoke that white meat at a low temp until it reaches a safe internal temperature. For some really great results, try the spatchcock method on your chicken before you smoke it.

What are some good side dishes for smoked meats?

There is no limit to what you can pair with smoked meats! Some of my favorites are coleslaw, baked beans, and cornbread. You can also smoke sides on a charcoal grill like grilled veggies!

What other appetizers and sides can I smoke?

Anything from hot honey wings to beef jerky to chicken sliders!

Any tips for maintaining my smoker?

Regular cleaning is super important. Be sure to remove ash and grease buildup after each time you use your smoker. For charcoal smokers, always make sure your grill top and skewers tools covers are in good condition, as this will extend the life of your smoker!

Why Salads Are Great for Summertime

Why are salads and summer a match made in heaven? Well, for starters, when the temperature starts to rise, the last thing anyone wants is to slave over a hot stove. Salads are light. They’re fun. They’re easy to make, and even better, they’re incredibly versatile. You can throw just about anything in a bowl and call it a salad. Got some leftover grilled chicken? Toss it in. A bunch of random veggies haunting your fridge? Toss that in too! Salads truly let you be as creative or as basic as you want, depending on your current vibe. And they’re a great way to use up those odd bits of produce you’re not sure what to do with.

Beyond convenience, salads are especially great in summer because they’re packed with nutrients, and you need those to beat the heat! A salad chock full of fresh veggies gives your body the dose of vitamins, minerals, and fiber that it craves. And they’re super hydrating! A lot of veggies have a high water content, like cucumbers and tomatoes.

Salads are also one of the best ways to enjoy seasonal produce. Summer is prime time for sweet strawberries, juicy peaches, and delicious cherries, and adding any (or all 3) of them can take your salads to another level. You can even create homemade dressings from summer fruits. (Read on to check out how to make a fresh strawberry vinaigrette!)

Speaking of which, let’s talk about dressings. A good dressing can make or break a salad. In summer, you get to enjoy lighter dressings like zesty vinaigrettes for a refreshing kick that won’t leave you feeling weighed down. And it’s super easy to make your own dressings at home with just a few ingredients, like olive oil, vinegar, mustard, and honey!

Salads are also very portable. Whether you want to eat on the patio or pack up a summer picnic lunch, it’s fairly easy to take a salad with you wherever you choose to soak up the summer vibes. 

Now that I’ve laid this out, I feel like there’s more reasons than not to enjoy salads in the summer. Personally, I just love the feeling of nourishing myself with crisp, refreshing, light fruits and veggies in the summertime. There’s something so satisfying about enjoying the taste of nature in its prime.

Chanterelle, Bacon and Plum Salad with Blue Cheese

This list starts with one of my favorite summer salads. Sweet, juicy, caramelized plums. Barely sauteed fresh chanterelles. Crumbly blue cheese. Crisp savory bacon. If this nutritious recipe sounds delicious to you, you’re gonna love this salad! 

And, it’s adaptable! Not sure where to get chanterelles? Don’t worry. Any type of mushroom will do. Slice up some meaty portobello or even some white button mushrooms. No plums on hand? Feel free to use any stone fruit for this recipe, like peaches or nectarines. Stone fruits are summer fruits, and it’s the perfect time to use them! But the bacon? Sorry, but there’s no substitute for the bacon (other than vegan bacon). Trust me though, even if you have to make a grocery store run for bacon, it’s worth it.

Tomato and Watermelon Salad

If you’ve never thought of watermelon and feta cheese working together, you’re in for a treat! The combination of salty, sweet and refreshing ensures that every bite of this tomato salad is BURSTING with flavor. This recipe comes from Zov Karamardian’s book Simply Zov, Rustic Classics, and it has quickly become one of my favorite salads. What I love about this simple salad is that you can even toss in some grilled fish or steak to make it hearty or enjoy it on its own. The juicy tomatoes (especially when they’re heirloom) and watermelon make it a hydrating reprieve from the warm summer months.

Looking for a classic caprese salad using the freshest ingredients possible? This is the salad for you! Sliced tomatoes, fresh basil leaves, and fresh mozzarella make this one of the best salad recipes out there, but it doesn’t stop there. The real highlight is the homemade Basil Vinaigrette! With just a couple fresh herbs, oil, and vinegar, you’ll have a dressing so good, you might find yourself wanting to use it on everything!

When it comes to eating leafy green salads on a hot summer day, I can’t forget to mention Deb Perelman’s Kale Salad with Cherries and Pecans from her Smitten Kitchen cookbook. It features a bed of raw kale, creamy goat cheese, some tart dried cherries, crunchy pecans and paper-thin slivers of radish. Not only is it super healthy, but every bite is packed with a texture and sweetness, and that makes this crunchy salad perfect for summer picnics!

Seared Salmon Salad with Baked Crispy Chickpeas & Fresh Strawberry Vinaigrette

I got to do a great segment for The List all about the popular MIND Diet, which aims to improve brain function and prevent dementia, and one of the recipes I created for this segment was my Seared Salmon Salad, which also makes for an amazing summer salad! And what’s great is that it’s one you can play around with. In fact, you can make your base with any dark leafy greens, like arugula, kale or baby spinach, and then add in your favorite fresh vegetables.

The crispy chickpeas are SO easy to make and they give this salad a great crunch. The homemade strawberry vinaigrette is also a snap and adds a beautiful, light sweetness to top it off. This one actually became a go-to salad for me, and you may find that’s the case for you as well!

We’re not done yet! If you’re looking for something a little sweeter, or maybe just something beyond the classic salad, you’re going to love this beautiful Asian tropical fruit salad with a pineapple “bowl”. It features canned longan, lychee, and rambutan, as well as some tropical fresh fruits. My favorite canned fruits are the Asian variety, and when they’re mixed with other tropical sweet fruits like mangoes, kiwi and pineapple, it’s like enjoying a large bowl of love on a summer day. If you’re like me, and not a fan of overly sweet baked desserts, this is the best way to end a summer dinner in a light, refreshing way.

Stuck In A Rut? Here Are 3 Steps to Breaking Free & Getting Inspired

We’ve all been there. Sometimes life gets a little wacky, and stress can put you in a mental, emotional, or sometimes even spiritual rut. The inspiration and motivation you had before seems to be evading you, and the universe seems to be throwing you curveball after curveball. 

When this happens, we often want so desperately to get out, but have no idea where to start. I go through this too, and whether I feel it just starting to sneak up on me, or I look around to find myself deep in a rut I’m not sure how I got into, I put these 3 steps into practice. I like to think of them as the starter recipe for getting back to joy, or the rope I use to hoist myself out of the uninspired hole I’ve fallen into. And I thought I’d share it with you, because it works!

🔥Fire🔥 is often used as a metaphor for energy, passion, and purpose, 3 things we feel severely disconnected from whenever we’re in a rut. Likewise, these 3 steps are all about bringing your fire back, hence, they’re all named accordingly. 

 

Step 1: Spark

Find novelty

The spark is what starts it all. You can’t start a fire without a few sparks. If life were a game of pinball, the spark is where you pull back the plunger that inevitably launches you into action. 

The spark, in this case, is all about seeking novelty. Remember when you were a kid experiencing new things all the time? Your natural curiosity led you to explore simple things like why there were so many kinds of bugs in your backyard alone, why grass always felt cool on a hot day, or the endless possibilities of what you could make out of sticks and mud. Returning to joy is less about trying to force yourself to see through rose-colored glasses, and more about going back to a curious mindset. 

The spark is about putting yourself in that headspace, and allowing yourself to naturally gravitate toward what interests you to explore it further. You probably already have a few things in mind. Maybe you’ve always wanted to try your hand at macrame or maybe you’ve always wondered how a clock works. It can be just about anything, no matter how small. The point is to let your curiosity guide you toward something new, and then feed that spark by learning and getting involved in that interest. Whether you end up going down one rabbit hole or many doesn’t matter. What matters is the change in your brain state. 

The parts of your brain that activate when you get curious are the nucleus accumbens, which is associated with motivation and action, and the midbrain, which is a dopaminergic region. Studies have shown that dopamine, the chemical that drives your brain’s reward system, is intricately linked to the mind’s state of curiosity. And when you explore and satisfy that curiosity,  dopamine floods into your brain, causing you to feel happier.

So, in essence, the first step to inviting joy into your life is to become a curious novelty-seeker, and that just means being open to exploring new things that spark your interest.

 

Ignite

An act of kindness

You’ve pulled back that pinball plunger, now it’s time to let it rip and launch yourself into the game. That’s where ignition comes into play. 

So, how do we “ignite”? We go a step further than tickling our brain with fun new things, and start to tickle other people’s brains. This means taking the focus off of ourselves, and instead, asking the question: How can I creative magical moments for others?

What can you do today to make someone else’s day? Even if just for a moment. How do you carry the spark to someone else? 

Some ideas might include:

  • complimenting a stranger
  • sending someone a thoughtful card
  • calling someone just to say hello
  • picking flowers for a friend
  • buying a small gift for a relative
  • just holding space for someone to vent or cry
  • showing support for a loved one’s project
  • buying lunch for an unhoused person

There are so many things we can do to create magic in other people’s lives. 

On a base level, this practice takes the focus off of our stresses and puts us in a mode of kindness. Physiologically, performing acts of kindness positively alters your brain by boosting serotonin and dopamine, which cause feelings of well-being and satisfaction. On top of that, this practice is known to strengthen connections, improve our sense of purpose and belonging, and reduce stress levels for both the giver and the receiver!

At the end of the day, igniting is simply about taking action for others and creating joy by spreading joy. 

 

Fuel

Simple Pleasures, Deeply Felt

Fuel is what keeps the fire (or in this case, dynamic joy) going. Our pinball is in play. How do we keep it bouncing around as long as possible? 

For me, it’s a familiar little concept you might have heard me talk about before: Simple Pleasures, Deeply Felt. 

What does this mean? It means taking on a shift in perspective and how we perceive the world. In action, it means slowing down and noticing the small things. Getting incredibly present. Amplifying tiny moments of joy by sitting with them and feeling them to their fullest.

Many of us live in societies where everything is so fast-paced. It’s so easy to get swept from one moment to the next, and at the end of the day, be left with nothing more than cursory memory of those moments, where nothing really stands out. Going through each day at this pace leaves us with very little to reflect on, to enjoy, to remember, and to experience in the moment.

It’s been said by many a philosopher: You find what you look for. If you’re looking for beauty, you’ll find beauty. If you’re looking for negativity, you’ll find that too. In a similar way, when we make a conscious decision to immerse ourselves in simple pleasures, we find more and more simple pleasures, and build a stronger gratitude for life overall. Scientists call this phenomenon “predictive processing” or the “expectation effect”, which means that what you see is mostly defined by what you look for. So, if you have the choice, why not look for simple pleasures to fill your life with?

I have this philosophy tattooed on my arm to remind myself each day to appreciate the simple pleasures of. It’s incredibly intentional. Really take in each moment.

In this review, I’ll share my experience with HelloFresh, including how it simplified my meal planning and preparation. I’ll discuss the convenience of their service, the quality and freshness of their ingredients, and my thoughts on the meals I tried.

I wanted to get a full idea of what HelloFresh had to offer, so I opted for 3 meals for the week. Upon first receiving my HelloFresh box, I opened it to find it was fully insulated. There were 3 cold packs of protein, 3 sealed brown bags, and 3 recipe cards with step-by-step instructions. 

I honestly didn’t know what to expect from their bagged contents, and I was delighted to find they were filled with pre-measured ingredients! Wait… you mean I don’t need break out all my large bags of produce and bottles of oils, vinegars, and spices? I think I’m in LOVE!

Here are the HelloFresh meals that came in my box:

HelloFresh Mexican Bowl Ingredients

Mexican Chicken & Rice Bowls with Salsa Fresca & Lime Sour Cream: Chopped chicken breast, jasmine rice, sour cream, fresh produce for the salsa. Even hot sauce! This one reminded me so much of our Buddha Bowls. (Grains, proteins, veggies, a yummy sauce!) I was really excited to make this one. As a chef, I tend to wing recipes based on experience, but I wanted to follow the recipe for this one to get the full experience of cooking a HelloFresh meal the way it was intended and the way anyone who’s not a chef would. And honesty, it came out GREAT. 10/10. No notes. I especially loved the Lime Sour Cream! It just enhanced everything.

HelloFresh Szechuan Pork Noodle Stir Fry Ingredients

Szechuan Pork Noodle Stir-Fry with Carrot, Scallions & Peanuts: Next up was this savory, spicy stir-fry. This meal included a package of ground pork, scallions, a carrot, a clove of garlic, ramen noodles, and an assortment of pastes and sauces, including peanut butter! As someone who specializes in Asian cooking, you can say I was initially apprehensive about this one. But when it came to cooking it, it seemed straightforward, easy for anyone to do, had a short 10-minute prep time, and ended up being DELICIOUS. The peanut butter added something so unique to this dish. I absolutely loved it!

HelloFresh Italian Beef Stuffed Bell Peppers Ingredients

Italian Beef Stuffed Peppers: This was surprisingly a 4-person meal, which I appreciated as a little bonus since I opted for three 2-person meals. (This one just happens to come in either 4 or 8 person servings. Thanks HelloFresh!) It featured ground beef, bell peppers, crushed tomatoes, italian seasoning, couscous, as well as a few sauces, pastes, and produce items to give it the full Italian flavor treatment. This meal was remarkably easy to prep for, but took a little more doing when it came to cooking it (roasting, pan frying and broiling). I didn’t mind that, especially after I took my first bite. WOW. The flavor of the stuffed bell peppers was incredible!! HelloFresh definitely knocked it out of the park with this one.

Italian Beef Stuffed Peppers: This was surprisingly a 4-person meal, which I appreciated as a little bonus since I opted for three 2-person meals. (This one just happens to come in either 4 or 8 person servings. Thanks HelloFresh!) It featured ground beef, bell peppers, crushed tomatoes, italian seasoning, couscous, as well as a few sauces, pastes, and produce items to give it the full Italian flavor treatment. This meal was remarkably easy to prep for, but took a little more doing when it came to cooking it (roasting, pan frying and broiling). I didn’t mind that, especially after I took my first bite. WOW. The flavor of the stuffed bell peppers was incredible!! HelloFresh definitely knocked it out of the park with this one.
