Apple Pie Snickerdoodles

Apple Pie Snickerdoodles are my snickerdoodle cookies stuffed with a sweetened apple filling, rolled, and baked in a cinnamon-sugar mixture. If you want the actual apple pie, be sure to check out Dwight’s Caramel Apple Pie recipe!

Apple Pie Snickerdoodles

The perfect sandwich cookie must have two things… a soft, chewy, perfectly flavorful cookie and a filling that can stand up to it. This cookie has a crispy outside with soft and chewy inside, including that apple pie flavor in every bite! It’s almost like eating a piece of apple pie with your hands. But, it’s okay because it’s a cookie!

Apple Pie Snickerdoodles Recipe

There are three parts that come together perfectly in this cookie–the apple filling, cookies, and the cinnamon-sugar topping.

Apple Filling (full recipe below)

  • Granny smith apples
  • Brown sugar
  • Cinnamon
  • Butter

Cookie Ingredients

  • Unsalted butter
  • Granulated sugar
  • Eggs
  • Vanilla extract
  • All-purpose flour
  • Cream of tartar–This adds some tanginess to the cookies, but it can be left out if you don’t have any on hand.
  • Baking soda
  • Salt

Topping

  • Granulated sugar
  • Ground cinnamon

Adding Pie Filling Into Apple Pie Snickerdoodle Cookies

Apple Filling

The first thing you will want to do for this recipe is peel, core, and dice your apples. For this recipe, dice the apples on the smaller side.  In a bowl, combine the chopped apples with the brown sugar, cinnamon, and melted butter, making sure to coat each apple piece. Set this aside while you prepare the cookie dough.

I used Granny Smith apples for the recipe because they remain firm when baking. They won’t turn to mush and they tend to retain their shape when baked. A few other options you could try would be Honeycrisp apples, Braeburn, or Pink Lady apples.

How to Make Apple Pie Snickerdoodles

Just like with any cookie recipe, begin by beating the butter and sugar until it’s creamed. Add in the eggs, one at a time, and the vanilla. Once that’s all mixed together, turn the mixer on low and add in all of the dry ingredients. Beat it until the cookie dough comes together.

Using a 1 tablespoon scoop, scoop out rounded balls of the dough. Make a well in the center of each dough ball and add a heaping teaspoon of the apple mixture inside. Form the rest of the cookie around the filling and place them on the lined cookie sheets while you mix the cinnamon and sugar with a whisk in a wide bowl.

Roll each of the stuffed balls of dough into the cinnamon-sugar mixture and place 2 inches apart on parchment-lined baking sheets. Bake the cookies for 10-12 minutes. After baking the cookies, remove them immediately from the baking sheets and place them on a cooling rack.

Can you Freeze Snickerdoodle Cookies?

Absolutely! However, I recommend freezing the cookie dough without the apple filling. You can always add that when you are ready to bake the cookies. In addition, I have noticed that adding the cinnamon sugar right before baking makes a more flavorful cookie.

How to Freeze Snickerdoodles: To freeze in pre-portioned cookies, prepare your dough, then scoop the cookies onto a parchment-lined cookie sheet. They can be placed close together. Set the cookie sheet in the freezer just until the dough is cold, about two hours. Then transfer the dough balls to an airtight freezer bag or airtight container that fits into your freezer.

A day before you are ready to bake the cookies, take them out of the freezer and place them in the refrigerator overnight. When ready to bake, prepare the apple filling, fill the cookies, roll into the cinnamon-sugar mixture and bake as directed in the recipe below.

Ingredients

Apple Filling

  • 2 medium granny smith apples, peeled, cored, and finely diced
  • 1/4 cup (50g) brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon butter, melted

Snickerdoodle Cookie Dough

  • 1 cup (2 sticks, 226g) unsalted butter, softened but not melted
  • 1 1/2 cups (300g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tablespoon vanilla extract
  • 2 3/4 cups (352g) all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Cinnamon Sugar

  • 3 tablespoons granulated sugar
  • 3 teaspoons ground cinnamon

Instructions

Apple Filling

  • In a medium bowl combine diced apples, brown sugar, cinnamon, and melted butter. Stir to combine and set aside.

Snickerdoodle Cookie Dough

  • Preheat oven to 375°F. Prepare three cookie sheets by lining with parchment paper or Silpat.
  • In the bowl of a stand mixer (or using a hand-held mixer on the highest setting) cream together butter and sugar. (about 2-3 minutes)
  • Add in the eggs one at a time, then add vanilla. Mix until fully incorporated.
  • With the mixer on low (or off) add in the flour, cream of tartar, soda, and salt.
  • Using a 1-tablespoon scoop, scoop out rounded balls. Make a well in the center and place a heaping teaspoon of the apple mixture inside. (Avoid the liquid in the bowl.) Form the rest of the cookie around the apple filling and place them close together on one of the cookie sheets.

Cinnamon Sugar

  • Mix the 3 tablespoons of sugar and the cinnamon in a wide bowl. I like to use a fork but a small whisk also works.

Assembly

  • Roll balls of dough in the cinnamon-sugar mixture. Place 2 inches apart on parchment-lined baking sheets.
  • Bake 10 to 12 minutes. Carefully remove immediately from baking sheets and place on a cooling rack.

Nope, my priorities are typically on bread, pasta, anything with cheese, more bread, and maybe more pasta.

But if they’re grilled, I will eat every single vegetable there is. Smothered, topped, drizzled with this epic basil sauce. So perfectly tangy, so perfectly garlicky.

Not like vampire-garlicky but just enough for that wonderful kick.

Easy Grilled Vegetables

Perfectly crisp-tender grilled veggies served with an amazing, tangy, garlicky basil sauce. You’ll want this sauce on everything!

Ingredients:

  • 3 tablespoons olive oil
  • 1 pound asparagus, trimmed
  • 1 pound cherry tomatoes, stemmed
  • 8 ounces cremini mushrooms, halved
  • 2 ears corn, each cut crosswise into 4 pieces
  • 2 zucchini, quartered lengthwise
  • Kosher salt and freshly ground black pepper, to taste

For the basil garlic sauce

  • 1/2 cup olive oil
  • 2 1/2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic, chopped
  • 1/3 cup packed fresh basil leaves
  • 3 tablespoons packed fresh parsley leaves
  • Kosher salt and freshly ground black pepper, to taste

Directions:

  1. Preheat grill to medium heat.
  2. To make the basil garlic sauce, combine olive oil, vinegar, Dijon, garlic, basil and parsley in the bowl of a food processor until smooth and vibrant green; season with salt and pepper, to taste. Set aside.
  3. Brush olive oil onto the asparagus, tomatoes, mushrooms, corn and zucchini; season with salt and pepper, to taste.
  4. Add vegetables to grill, and cook, turning occasionally, until lightly charred all over, about 3-4 minutes for the asparagus, tomatoes and mushrooms and about 5-8 minutes for the corn and zucchini.
  5. Serve immediately with basil garlic sauce.

Just like an earthquake causes the earth to shift and cause cracks in the land, this Oreo Earthquake Cake has ingredients that may move around as it is being baked and you may see cracks and crevices in the top after it’s baked. But, it doesn’t change the fact that it is a decadent dessert that is a chocolate lover’s dream! It is an ooey-gooey dessert with a chocolate and cream cheese center that is made even more chocolatey by adding some chocolate ice cream on top.

Oreo Earthquake Cake Recipe

Each time you take a bite of this dessert, you will get a fork or spoonful of flavor and cookie crunch in each bite.

Ingredients (full recipe below)

  • Chocolate cake mix
  • Oreo cookies
  • Cream cheese
  • Butter
  • Confectioners’ sugar
  • Vanilla extract
  • Salt

Topping:

  • Semi-sweet chocolate chips
  • Crumbled Oreo cookies
  • Chocolate ice cream–This is optional to add after the cake has been baked, but if you have some chocolate ice cream on hand, I would highly recommend adding a scoop to the dessert!

How to Make an Oreo Earthquake Cake

This Earthquake Cake is so easy to make, and just like the name implies, it is bursting with flavor! If you love chocolate cake and cheesecake, you get the best of both desserts in this cake. So, preheat the oven to 350°F, prepare a 9×13-inch pan with non-stick spray, and get out the ingredients you need.

  1. First, prepare the chocolate cake batter by following the directions on the box. (But don’t bake the cake.)
  2. Next, layer the bottom of the sprayed pan with the Oreo cookies. Just lay them out flat; no need to break them or crush them for this part. I used 24 Oreos to cover the bottom of the pan.
  3. Then, spread the chocolate cake batter that you just prepared over the layer of Oreo cookies.
  4. Meanwhile, in a large bowl, combine the cream cheese, butter, confectioners’ sugar, vanilla, and salt. Beat with a mixer until combined.
  5. Dollop the cream cheese mixture on top of the cake batter and create a marble swirl.
  6. Sprinkle the chocolate chips and crumbled Oreos for the topping and bake for 55-60 minutes. The cake is done when the center is set.
  7. Serve warm, and don’t forget about adding a scoop of chocolate ice cream on top!

How to Make a Marble Swirl

It’s pretty easy to get that fancy marble swirl in a cake. Since this Oreo Earthquake Cake has the chocolate cake layer topped with a light-colored cream cheese layer, it’s perfect for marbling! After you have the chocolate cake batter in the pan and the cream cheese mixture prepared, it’s simple. 

Add dollops of the cream cheese mixture on top of the chocolate cake batter. Use a butter knife or metal/wooden skewer to make loose vertical zig-zags from one end of the pan to the other. Clean off the knife and make the zig-zag pattern in the opposite direction. You don’t need to over-swirl. A few swirls in each direction will be just enough to get the flavors mixed together.
