Homemade Rocky Road Ice Cream

If you’re like me there’s never a moment where having ice cream doesn’t make sense. One of my favorites is this crunchy classic rocky road ice cream which is always my go to ice-cream. Unlike other ice creams, it has a combination of smooth and creamy ice cream based on chocolate, nuts, and marshmallows. The rich and soothing combination makes you want to have more every time.

Ever since I started making ice creams at home, rocky road ice cream was always top of the list. It wasn’t until I found this recipe that I gave it a try, and it turned out to be more delicious than my expectations. Today, I will share all the different ingredients and the combination of things that I used to make this ice cream.

How To Make Rocky Road Ice Cream

To make this ice cream, you will need an ice cream machine to churn up the chocolate milk mixture. Having an ice cream machine helps, but you can also use other methods of churning that you already use. I personally prefer having an ice cream machine, as I usually make ice cream at home, and if you are also an ice cream lover, get yourself a quality ice machine.

Moving on to the actual recipe, let’s discuss the ingredients that you will need for this ice cream. Remember that the base of ice cream is made out of milk, eggs, cream, and sugar. These ingredients are first cooked together, and chocolate is mixed to get a smooth mixture. And when the ice cream is churned properly, other ingredients like marshmallows, nuts, and chocolate pieces are added to give the ice cream a crunchy texture.  I add chopped marshmallows to the ice cream, but you can also use mini-marshmallows for this ice cream.

In nuts, you can practically use any combination, like mixed nuts or almonds only. I personally like the taste of chopped walnuts and almonds, so I have used them in the recipe here.  But I keep experimenting with the recipe and change the nuts like cashews at times then replace them with chopped pecans, pine nuts, or hazelnuts.

There is yet another way to make this smooth ice cream crunchier. You can always have crushed biscuits to the ice cream once it is churned. Oreo biscuits make a good combination with this ice cream. For this, take 3-4 Oreo cookies and crush them into small pieces and add these pieces to the ice cream. Mix it gently to spread the cookies evenly into the ice cream, and then directly put it in the freezer.

    It’s time to master the art of making ice cream by giving this homemade rocky road ice cream recipe a try. It’s easier than you think to make.

    Ingredients

    • 2 cups of milk

    • 1 1/2 cups heavy cream

    • 1/8 tsp salt

    • 1 tsp vanilla extract

    • 1/3 cup sugar

    • 5 egg yolks

    • 1/3 cup sugar

    • 7 oz dark chocolate chopped

    • 1 tbsp chocolate liquor

    • 1/2 cup marshmallows chopped

    • 1/2 cup walnuts or almonds, chopped

    • 1/2 cup chocolate chopped

    Directions

    • First, keep the ice cream attachment bowl in the freezer about one day before making the ice cream.
    • Now take a medium-sized saucepan and place it over medium-low heat.
    • Add heavy cream, milk, a pinch of salt, 1/3 cup sugar, and 1 tsp vanilla extract to the pan.
    • Cook the mixture until it boils.
    • Meanwhile, beat egg yolks with 1/3 cup sugar in a medium-sized bowl until the mixture turns pale yellow in color.
    • When the milk is completely boiled, add 1/3 cup of this mixture to the egg mixture and stir well. Now pour this mixture back into the boiling milk mixture and stir it well after removing from the heat.
    • Once mixed, return the pot to the heat and continue to cook until the mixture thickens. It will take 12 minutes to thicken the mixture.  Don’t forget to stir the mixture occasionally.
    • Meanwhile, add 7 oz dark chocolate and chocolate liquor to a medium-sized bowl.
    • And strain the cooked milk mixture into the chocolate bowl and whisk it well until the chocolate is melted. It will give a thick chocolate mixture.
    • Prepare an ice bath by mixing water with ice cubes in a large mixing bowl. Then place the creamy milk chocolate mixture bowl into this ice bath. Allow it to cool completely then refrigerate the mixture for 1 hour.
    • Meanwhile, prepare and assemble your ice cream maker and place the ice cream attachment in the mixer. And the ice cream mixture to this attachment and churn it on low speed for about 30 minutes according to the instruction of the machine.
    • Once the ice cream is churned, fold in nuts, chocolate pieces, and marshmallows then churn for another 5 minutes.
    • Now transfer the churned ice cream to a sealable container and cover it to freeze overnight.
    • Scoop out the prepared ice cream and serve it fresh with your favorite toppings and garnish.

    Notes

    • This ice cream recipe can give you as many as 5 cups of ice cream, and you can double the proportions to make ice cream or a large-sized family.
    • You can always add other toppings to the ice cream to make it more interesting and delicious. Chocolate syrup, chocolate shavings, and colorful sprinkles are just some of the ways to make it look great and taste better.
