Bisquick Peanut Butter Cookies Recipe

Baking cookies should be a joyful thing, but I have begun to notice all these elaborate, expensive and time-consuming recipes on the internet. Not the case with these Bisquick peanut butter cookies though but more on that in a minute.

They always have all these requirements for what cookies should and shouldn’t be and I say no more! Cookies are supposed to be easy, convenient and quick to make – otherwise, why bother at all, am I right?

So these Bisquick Peanut Butter Cookies are perfect to revive that love for baking! It uses the Bisquick Original Pancake and Baking mix and I must say, I don’t think I will ever make anything from scratch again!

Keeping a box of this mix in your pantry will save you a ton of time, especially if you have to make last-minute goodies.

Unlike most cookies that have very specific textures when baked, these can be baked to create either chewy cookies or incredibly delicious crispy ones!

It is also very easy to change the flavor of the cookie by swapping the peanut butter with any other tasty spread – using chocolate and almond spreads are my favorites. And the best part, you don’t even have to change anything else in the recipe; amazing!

How To Make Bisquick Peanut Butter Cookies

Line a cookie or baking sheet with non-stick baking paper or non-stick cooking spray.

In a large bowl, combine the peanut butter, condensed milk and vanilla extract. Mix the ingredients until they are fully mixed. Add the Bisquick baking mix and mix until a smooth, pliable dough forms.

Divide the dough into 12 balls using an ice cream or cookie scoop. Space the dough balls about 2 inches apart before gently pressing them down with a fork.

Cover the cookies with saran or plastic wrap before placing them in the fridge so they can rest.

Preheat the oven to 350 degrees Fahrenheit.

Before baking the cookies, sprinkle a bit of brown sugar over them. For soft cookies, bake them between 12-15 minutes or until golden brown. For crispier cookies, bake them for a few additional minutes.

Remove them from the oven and allow them to cool before serving them with a cold glass of milk.

    This Bisquick peanut butter cookie recipe is the best and nothing can change my mind! It uses 4 ingredients, only takes a few minutes to make and can be easily made into other flavors. Why would you need any other recipe?

    Ingredients

    • 1 cup creamy peanut butter

    • 1 can (14 ounces) sweetened condensed milk

    • 1 tablespoon vanilla extract

    • 1 cup Bisquick Original Pancake and Baking Mix

    Directions

    • Line a baking or cookie sheet with non-stick baking paper or a non-stick cooking spray. Alternatively, you can use a baking silicone mat.
    • In a large mixing bowl, combine the peanut butter, sweetened condensed milk and vanilla extract. Mix the ingredients together until they are fully incorporated into each other.
    • Add the Bisquick Original Pancake and Baking Mix and continue mixing until a pliable dough forms.
    • Divide the dough into 12 equal balls using an ice-cream or cookie dough scoop. Alternatively, you can use two big tablespoons to divide and shape the dough. These cookies won’t spread much in the oven, so you can place all twelve, evenly spaced on a standard-sized baking or cookie sheet.
    • Gently push down each ball using a fork. You can make a criss-cross pattern if you’d like. Cover the sheet with plastic or saran wrap and place it in the refrigerator to rest for at least 1 hour. This will help the cookies hold their shape during baking and not spread flat.
    • About 30 minutes before you are ready to bake the cookies, preheat the oven to 350 degrees Fahrenheit.
    • Sprinkle the cookies with a bit of brown sugar before baking them in a hot oven for 12-15 minutes or until they are golden brown. This will give you a very soft cookie. For crispier cookies, bake for a few additional minutes, making sure that they don’t brown too much or burn.
    • Remove the cookies from the oven and allow them to cool on a cooling rack before serving them with a nice cup of coffee or tea.

    Notes

    • You can use an electric hand-held mixer that will allow you to combine the ingredients quicker and more efficiently than mixing by hand. For large batches of cookies, use a stand (countertop) mixer.
    • You can substitute the peanut butter with any other nut-butter or creamy spread, as long as they are smooth. This will allow you to use this recipe as a base for many other flavors.

    • You can also add other ingredients such as chopped nuts or chocolate chips. These ingredients should be added before all of the Bisquick mix has been incorporated. This will prevent you from overworking the dough.
