Sometimes we all want home cooked comfort food. And sometimes we want fast food at one of the world’s most successful restaurants. Why can’t you have both? When we first discovered the KFC Chicken Pot Pie, we couldn’t believe what we were seeing, could life really be so good? In this article we are going to show you how to make our very own copycat KFC Chicken Pot Pie recipe at home.

Ok so you’ve probably guessed, it’s not the usual fare from Kentucky fried chicken, because its not fried. But that’s ok, instead of crispy coated seasoning, we’ve got flaky puff pastry instead. Don’t worry, we forgive you colonel. We could even half believe it was good for us too. It contains a fair bit of vegetables! In fact, with each mouthful you’ll get crisp pastry, carrots, soft floury potatoes, peas, and some savory, creamy, chicken goodness.

How To Make KFC Chicken Pot Pie

We definitely haven’t been lazy in crafting this KFC Chicken Pot Pie recipe. We even make the pastry from scratch! This is good because it means we are cooking properly. This is not so good if you are busy so we’ll be straight up honest with you right now. If you want to use store bought or ready rolled pastry, then be our guest. You could even mix it up slightly and go for a different type of pastry such as short crust.

But we’re going to do it the real way…

Keep your butter cold and don’t handle the pastry too much with your hands. Why do we say this? Well, if you keep the butter cold it will stay in tiny little parcels of fatty goodness within the flour. When it cooks in the oven it puffs out slightly, giving that flaky golden pastry. If you melt the butter with the heat of your hands then you lose those little packets and as a result you will end up with flat, dull, heavy pastry.

The creamy filling that surrounds all of our pie ingredients is a bit of a cheat actually. But seeing as we went to all that effort to make real pastry, we think you deserve a break. We actually use a tin of chicken soup. The particular brand of chicken soup doesn’t really matter. What we will suggest is that you pick your favorite. If you want to make your KFC Chicken Pot Pie a little classier, just go for a better brand of soup.

Its up to you how you want to make the pie. For a genuine KFC Chicken Pot Pie, we recommend investing in some individual foil dishes. Then everyone can have their own, however if you’ve got a medium sized pie dish then that will be suitable too, just serve it in thick quarter slices (or attempt to eat it all yourself).

This Chicken Pot Pie actually makes an ideal dinner if you are on the go. If you’ve made individual pies they will keep for a couple of days and can be reheated. Alternatively, once you have assembled the pie, allow the filling to cool and place them apart in the freezer. They will cook in about 45 minutes from frozen (but the pastry won’t be quite as puffy).

    KFC chicken pot pie is one dish you’re going to love. You can make this dish in the comfort of your home. It’s certain to be a contender on weekdays when you’re in need of a pick up dish.

    Ingredients

    • For the pastry
    • 200 g white flour

    • 200 g chilled butter, grated

    • 100 ml of ice cold water

    • A pinch of salt

    • 1 beaten egg

    • For the filling
    • 2 chicken breasts, cooked and shredded.

    • 1 large carrot chopped into medium discs

    • 2/3 cup frozen peas

    • 2 medium potatoes peeled and cut into small chunks

    • Boiling water

    • 1 can chicken soup

    • ½ cup whole milk

    • 1 tsp salt

    • 2 tsp black pepper

    Directions

    • Preheat the oven to 390 degrees
    • In a large bowl sieve in the white flour. Add the butter and stir with a large pastry knife or a spoon. Keep stirring until the butter and flour is well mixed. Use your hands sparingly, you want the mixture to look like rough breadcrumbs.
    • Add the water a quarter at a time and keep stirring. Eventually you will end up with a dough that is just holding together. Add another tablespoon of water and give a final quick knead with your hand. Once it is a solid lump place the ball of dough into the refrigerator.
    • In a pan add the carrots and the potatoes. Simmer for 15 minutes.
    • In a separate pan add the chicken soup and milk and place over a medium heat. Stir every few minutes until the mixture is hot. Then add the shredded chicken, the drained carrots and potatoes and the frozen peas. Also add the salt and pepper.
    • While your filling is simmering, remove the pastry from the refrigerator and tip out onto a floured work surface. It will be hard work at first but using a rolling pin, roll the dough until it is uniformly flat and 1/8 of an inch thick.
    • Using a large spoon or ladle, evenly fill 4 pie dishes (or one medium) with the pie filling.
    • Roll the pastry over the rolling pin, then unroll it over each pie case, trimming around each case with a sharp knife. Slash a cross in the top of each pie to let the steam escape. Finally,  paint with the beaten egg.
    • Bake in the oven for 25 minutes or until the tops are crisp and golden.
    • Serve and enjoy!

    Can You Reheat a Chicken Pot Pie?

    Yes you absolutely can. Start by preheating the oven to 280 degrees. Ensure the edges of the dish are covered with foil to ensure the crust doesn’t get burnt. Allow the homemade chicken pot pie to heat up for 15 minutes. Depending on the size of the dish, you might require longer. Allow it to get heated right through before serving.
