How to Make Texas Roadhouse Country Fried Chicken

So, what you are definitely not going to need is a frier or skillet. We get the crispy outer coating by using panko breadcrumbs. Whereas normally you might bread chicken or fish using flour and an egg before dipping, we have come up with a little secret ingredient. It ensures you get a nice even and golden coating, and even makes the chicken taste a little juicer.

Want to know what it is?

Butter. And lots of it. You can have taste or you can have skinny? Which do you want the most right now?

That’s right, us too. Read on….

The butter serves a few purposes. As we said it keeps your chicken nice and juicy, and ensures an even coating. However, it is what allows us to oven bake this recipe instead of frying it. The breadcrumbs soak some of the butter up and then cook until lovely and golden whilst roasting. It’s kind of like what an air fryer does, except that you will be using an oven.

Let’s take a look at some tips and tricks to make sure your recipe tastes exactly like the authentic Texas Roadhouse Country Fried Chicken!

    Ingredients

    • For the Texas Roadhouse Country Fried Chicken:
    • 2 oz panko breadcrumbs

    • 2.5 oz white flour

    • ½ tablespoon garlic power

    • ½ tablespoon dried parsley

    • A large pinch of black pepper

    • A large pinch of salt

    • 40z butter

    • 4 large/6 medium chicken breasts

    • For the Texas Roadhouse Gravy:
    • 1 oz butter

    • 2 oz white flour

    • A large pinch of pepper

    • 3 fl oz chicken stock

    • 24 fl oz milk

    • 2 tsp crushed garlic

    • A pinch of cayenne pepper

    Directions

    • The Chicken
    • Preheat your oven to 430 degrees Fahrenheit, take out a baking tray with a wire rack.
    • Take your chicken breasts and, one by one, flatten them using the technique that we described in our tips and tricks.
    • On the hob or in a microwave melt the stick of butter and then transfer to a shallow bowl.
    • In another large bowl mix the breadcrumbs, flour and the rest of the dry ingredients.
    • One at a time, dip your flattened chicken breasts into the melted butter then immediately toss them into the bowl of breadcrumb mix. Turn and toss until each breast is evenly coated and then place gently onto the wire rack in the baking tray.
    • Place the tray into the oven, and bake the chicken for around 40 minutes or until the outside is golden and the breast is cooked through.
    • The Gravy
    • In a saucepan over medium heat, melt the butter and add the flour a teaspoon at a time. Stir until you have a thick paste. Then add the garlic. Fry for 1 minute.
    • In a jug, combine the stock and milk. Add this ¼ at a time to the flour and butter mix, stirring constantly. Add the cayenne pepper and give it a final stir.
    • Keep warm on a very low heat until the chicken is ready. Then serve over the chicken and enjoy!

    Tips & Tricks

    1. Make sure your oven is hot enough.

We advocate preheating it to 430 degrees Fahrenheit in this country fried chicken recipe. The aim is to completely toast the outer coating. If your oven is not at the right temperature it will go soft and soggy. And nobody likes a soft and soggy breast!

    2. Make your breasts thin!

Thick chicken breasts tend to cook unevenly. You don’t want this with chicken. If you’ve ever eaten Texas Roadhouse Country Fried Chicken, you’ll know that they tend to be thinner. Do you know how they achieve this? They bash the breast flat, and so should you. We find the cleanest way to do this is put an individual breast in a food bag or sandwiched between two sheets of food wrap, and then give it a good bash with a rolling pin, or a meat hammer. The bag keeps your chicken intact and stops you getting any bits or mess on your rolling pin and work surface. You are looking for the chicken to end up about the same thickness as your hand.

    3. Elevate your dinner

We mean this literally. You don’t want to have a crispy top and a soggy bottom, so when it comes time to cook the Texas Roadhouse Country Fried Chicken, place it in an oven pan, but with a wire rack supporting it from underneath. This allows the hot air from the oven to circulate around the breast in its entirety, ensuring even cooking and consistency

    4. Make sure you get your gravy base smooth before adding the liquid.

We make the gravy from scratch in this recipe, using flour and butter as a base. Make sure you get the paste nice and smooth by stirring it constantly at an early stage. If you have a lumpy base, you will end up with a lumpy gravy.

    Conclusion

This is actually quite a simple recipe to make. We like to feel that we have offset the butter by oven cooking the chicken… But we do feel a bit guilty about calling it a Texas Roadhouse Fried chicken recipe. That said it is less prep and has all the taste so why not? Serve with some green beans and potatoes. Enjoy!
