Set the bar higher. When you find yourself wondering, “why am I not more” or you’re feeling disappointed in yourself, it’s probably because you haven’t adjusted your expectations in awhile. Set high expectations for yourself and you will meet them. 

Be nice! The more positive energy you send out into the world, the more you can expect to get it back. However, I don’t think this works if you are being nice only for the soul purpose of getting something in return. Be genuine and kind!

Breakfast in one minute sounds like the ultimate way to start your morning. When i’m ready to have a productive morning I love starting with a protein boost, but don’t love taking the time to cook. This easy microwave scrambled egg recipe is done in one minute and is so delicious!

Microwaving scrambled eggs is so easy and fast, making it the perfect breakfast. Taking the mug in and out of the microwave to scramble the eggs rather than scrambling them right in front of you on the stove is the only downside, if you really had to find one. However, being able to cook your eggs perfectly in a mug and walk right out of the door in the morning makes up for that!

  • I love substituting creme fraiche (French cream) for the liquid! Creme friche is thick, creamy, and has just the slightest tang. Add a spoonful in place of the milk. 
  • Add a tablespoon of chopped ham or turkey while scrambling the eggs. Even cooked breakfast sausage would be fabulous! 
  • Leftover cooked vegetables from the night before would be an awesome mix-in! Just chop them up into smaller bite sized pieces.

I love having the ability to cook a potato in no time with minimal effort and clean up. Most importantly, I don’t have to turn my oven on! In a few simple steps, you can cook a perfect baked potato in the microwave. Russet potatoes are my go-to for their affordability, but any kind of potato will work! If your potato is a little smaller, keep in mind that your cooking times may be shorter.

  • Preparation time is literally only 30 seconds and it doesn’t get much quicker than that! Cooking a baked potato in the microwave saves energy and time. No need to wait for the oven to heat!

Clean your potato really well before cooking it. Use cool water and scrub with your hands or a dish brush to get all of the dirt off. Poke enough holes in your potato to allow steam to escape. This will prevent a potato explosion from happening inside of your microwave.

Yes! To cook four potatoes in the microwave, place them all in a microwave safe dish or on a plate and microwave on high for five minutes. How to make potato skin crispy? 

Before microwaving, use your hands or a brush to coat the potato with olive and salt. This will help it crisp up as it cooks, but keep in mind that microwaves are a bit like steamers, so the end result won’t be super crispy. You can also preheat your oven to 400F and bake until he skin becomes crispy. Make sure to keep an eye on your potato while it’s in the oven so it doesn’t burn.

Once thing I love doing is actually topping my salad with potato wedges, which sounds like the opposite thing you’re supposed to do when eating a salad, but trust me it’s good! When you have a potato or two sitting on the counter begging to be cooked, but a baked potato doesn’t sound good, try this easy microwave recipe! Everybody loves them!
